Kadai Chicken Curry | Restaurant Style Recipe

    For Marination
  • In a bowl, add diced chicken, ginger and garlic paste, yoghurt and little bit of chicken masala. Mix well and refrigerate for about 30 mins.
  • For Tadka
  • In a small pan, heat oil and add whole red chillies, coriander seeds, fennel seeds, diced onions and bell peppers.
  • Add a pinch of salt and 1/2 tsp of Kashmiri red chilli powder. Saute for a minute and keep asie
  • For cooking the chicken
  • In a blender, add ginger, garlic, tomatoes, 1/4th onion, cashews and fennel seeds. Make a fine paste/puree.
  • In a pan, heat 2-3 tbsp of oil and add the onion tomato puree. Saute until the excess water evaporates and oil starts to separate.
  • Now add the dry spices such as kashmiri red chilli powder, chicken masala, kitchen king masala, salt, and any other curry masala that you like. Mix well.
  • Once the oil starts to separate, you can now add the marinated chicken and mix well
  • Now you can add 1/2 cup of water, cover and cook for about 15 mins. Mix periodically.
  • Once the chicken is cooked, add the tadka and shut the flame.
  • Serve hot with some rice or naan.
