Mushroom Orzo Risotto | Easy, Simple and Quick

I love italian food. Be it pasta, pizza or risotto, I am always looking for new ways to add flavor and try different recipes. This mushroom orzo risotto is one of my favorite recipes that i love enjoying with some juicy shrimps or pan seared scallops.

  • In a small cooking pot with lid, heat olive oil and add finely chopped garlic.
  • Now add the finely chopped onion and mushrooms. Saute for a minute.
  • Now add the Orzo pasta. Saute for about couple of minutes until the pasta is nicely toasted with the onion n mushrooms. It gives a really nice fragrance and flavor to the dish.
  • Add chicken stock or water, mix well and cook covered for about 10-12 minutes. Stir occasionally to prevent it from sticking to the bottom. Add salt, pepper and parsley. Mix thoroughly.
  • Now add the cheese and cook for another minute until the desired texture and dryness is reached. Some like it with some sauce white others like it dry.
  • Mix some slices of mushrooms for added flavor or you can also skip this step. Risotto is ready!
  • Garnish and serve hot!
