This lockdown has all moms stocking up their kitchen with snacks and browsing the internet to look for easy and quick recipes. Well, look no more. This easy and simple mini banana muffin recipe will satisfy the sweet cravings while keeping them bite sized. Follow the recipe and let me know how it turns out!

This recipe makes 12 regular size muffins but I have use mini muffin tray so it doubles the count to 24 bite sized muffins.

  • In a bowl, add the ripe bananas and mash it up using a fork
  • Now add all the wet ingredients such as sugar, butter, egg, vanilla essence and mix well.
  • The liquid ingredients should be blended well without lumps.
  • Now you can sieve Flour, salt, baking soda, baking powder and nutmeg powder into the bowl with wet ingredients. Fold gently and ensure there are no lumps.
  • Grease the muffin tin, I used little spray oil on my non stick ones. You can even add paper liners if you have them handy. add equal portions of batter until the pockets are about 3/4th full.
  • Now bake at 350F for 15 mins. Insert the toothpick to make sure the muffins are cooked thoroughly.
  • Serve them hot or cold. Add nuts/dry fruits to this to create your own version. You can store them in a airtight container for upto 3 days.
