Shrimp Curry in Red Thai Sauce | Easy Thai Curry Recipe

When trying out different recipes, I always try to add as many colors in my recipes as possible. On a recent visit to a local farmers market, I got hold of some raw jumbo shrimps, organic zucchini, fresh beans, colorful bell peppers and fresh basil. Oh the fragrance in my kitchen was just amazing. This red thai curry is simple and easy to make. Remember to use fresh ingredients for the best flavor.

I have used store bought curry paste here along with canned coconut milk.

  • Firstly, gather all the ingredients.
  • In a pan, add oil and saute all the veggies.
  • Now add the ginger garlic paste and cook for about 2-3 minutes.
  • Now add, salt, sugar and red chilli powder. Mix well and add the fresh basil leaves.
  • Now add the Thai curry paste. Let it boil.
  • Now add the shrimps and mix well.
  • Now add the coconut milk and let it boil for exactly 4 minutes. Do not overcook it otherwise shrimps will become rubbery.
  • Serve hot with some plain or coconut rice and enjoy!
