This quick recipe is ready in 20 minutes and can be enjoyed year round! This all time favorite is enjoys by kids as much as our elders. No ginger, garlic or onion required. Serve with chapati’s and enjoy!

- In a non-stick pan, heat oil and add cumin seeds. Then add cubed cauliflower and potato and cover it with a lid. Cook it for 5-10 mins. Mix periodically.
- Once you start to see them browning from the sides and potatoes are almost 80%-90% cooked, you may now add the peas and saute for another 3-4 mins.
- Add salt, red chilli powder and turmeric power. Saute for another 2 mins until the spices are thoroughly mixed. Check to ensure the potatoes and cauliflower are cooked properly. Adjust the cooking time if needed.
- Lastly, garnish with some fresh cilantro and enjoy with naan or roti.
Notes
- You can also use MDH/Shaan’s “Vegetable Masala”. Remember that those are salty so please adjust the salt as needed.
- You can skip potatoes and/or peas.
