Chicken and Vegetables stuffed Jumbo Pasta Shells in Alfredo Sauce

I started this blog to share simple and easy recipes that one could replicate and enjoy some delicious food. This one falls in comfort food category. My kids and husband absolutely enjoy this dish. The best part about this dish is that you can add any meat, tofu, veggies and continue making your own version.

  • In a saucepan, add 3 cups of water, 1/2 tbsp of salt and jumbo pasta shells. Boil for 10-12 mins and keep side.
  • In a the same saucepan, add olive oil and minced garlic. Saute until the rawness of garlic is gone.
  • Now add the all purpose flour and saute for a bout a minute.
  • Now add the milk and keep whisking until the milk thicken into sauce.
  • Now add salt, pepper and chopped parsley. Simmer the sauce.
  • Divide the sauce into half. We will use half for the stuffing and half for assembling the dish.
  • In half of the sauce, add chicken and veggies. Mix well as this will be the stuffing.
  • Now in a baking dish, spread the sauce.
  • Now place the boiled pasta shells.
  • Using a spoon, stuff the pasta shells with the chicken and veggie stuffing.
  • Sprinkle the mozzarella cheese on top and garnish with some parsley.
  • Now bake it at 425F for about 10 mins and serve hot!
