Creamy Baked Vegetables | Macaroni and Veggie Bake

Picture yourself enjoying a delicious plate of baked vegetables with some delicious and buttery garlic bread on a rainy day..yumm! This particular dish has gained so much popularity in India over the last decade and still continues to be everyone’s favorite. I typically always add a handful of macaroni in this variation of baked veg recipe, you can skip it too! This recipe serves 4 servings of sides and 2 servings of entrees. Pair it with some garlic bread and enjoy!

  • In a saucepan, bring 2-3 cups of water to boil and add 1 tsp of salt and macaroni. Cook for about 10 mins. If you are skipping the macaroni then simply follow the recipe from step 2 onwards.
  • Once the water starts boiling, add the mixed veggies and cook for about 3-5 minutes.
  • Drain the water and keep it aside.
  • In a pan, add olive oil and bell peppers. Saute for about a min.
  • Now add the all purpose flour and saute for another minute or so.
  • Add italian herbs, chilli flakes and salt. Mix well.
  • Now add the milk and keep mixing on a low flame.
  • Once the milk thickens, add black pepper and nutmeg powder. Mix well.
  • Now add the boiled veggies and pasta. Cook until the sauce thickens a bit more. For added creaminess, add 1-2 tbsp of cheese to this. cook for a minute or so and turn off the flame.
  • Now transfer the mix into a baking dish.
  • Top it up with some cheese. I used slices but you can sprinkle some shredded cheese.
  • Bake for about 3-5 mins at 400F. Serve hot with some garlic bread!
