Sabudana Vada | Tapioca Sago Fritters

This delicious dish is cooked by deep frying tapioca pearls, potatoes, green chillies, cilantro and peanuts. Sabudana is healthy, vegan & gluten-free. This is a classic rainy day treat which is mostly enjoyed during navratri time when fasting. Now a days I have seen these being served as an appetizer as well. Most people experience the fritters breaking apart when deep frying. This recipe is fool proof and I assure you that you will become sabudana expert in no time!   • In a mixing bowl, add soaked sabudana, cumin powder, salt, sugar, crushed peanuts, chopped green chillies and coriander leaves. Mix thoroughly.
  • Now add boiled potatoes and mash it together with the mixture. The mixture should be thick and little doughy.
  • Now make small patties and prepare them for deep frying.
  • Deep fry the patties. Ensure to not move them too much while deep frying. Flip them once.
  • Serve hot with some yoghurt dip and enjoy!
